Some people don't dig the casserole. They don't like their food all smooshed together and cooked up in the hot oven and covered with cheesse or sauce or what have you.
I love the casserole. I have a very cool "Build Your Own" Casserole recipe, but today I am not posting it- sorry Linds!
Today I am giving you the recipe for what I am cooking for my kids lunch today. It is easy and they love it. it's called Cheeseburger and Fries Casserole. It's not an official Rickerson Comfort Food, as I have ony been making it about 5 years.
Ingredients
1 can cheese soup
1 can golden mushroom soup
1 pound of ground beef, browned
1 package of frozen french fries (whatever kind you like, I used shoestring)
Preheat oven to 350.
Brown meat with chopped onions (just cause it always tastier with onions)
Drain fat off of meat,mix meat and soups in a bowl and pour into a casserole dish. Cover with french fried and cook 45 min or until fries are crispy.
Serve with ketchup, mustard and pickles.
Yum!

Pumpkin Fluff..Mmm mmm Good
This is so easy and so yummy ,and, once again, something you can make with low or non fat ingredients :)
I am not a pumpkin fan really, but there are a couple of pumpkin flavored things I will eat, and this is one of them! It's great to take to holiday parties.
1 can pumpkin (not pumpkin pie)
1 package of vanilla pudding (I have used chocolate too and it is just as delicious, so it's up to you)
1 container of Cool Whip
Mix together the pumpkin and the pudding together til well mixed, fold in all of the cool whip and blend til it is all blended...chill for a couple of hours
Serve with ginger snaps or grahams for dipping. Delicious!

Summer Cake
This is a big hit with the girls in my office! It's not really a "summer" cake, but I call it that because it is perfect for the summer. I always request this from my Mom for my birthday. And what is great about it is that you can sub the ingredients with low fat or even non-fat stuff.
White cake mix (and whatever you need to make the cake, usually some oil and an egg or two)
Package of Strawberry Jello
Package of Vanilla Instant Pudding
Container of Cool Whip, thawed
Make the cake,then poke holes ALL over it. I use a toothpick.
When the cake has cooled make the jello, pour the jello over the cake.
Make the pudding, pour the pudding over the cake.
Put the cake in the fridge to cool, about two hours.
"Frost" the top with thawed Cool Whip.
Ummmmm good. N'uff said.

Cheesy Cauliflower
So, this one is another love it or hate it. I LOVE it. As a kid I hated it and only ate the cheese part (because I hated all things vegetable and never pooped as a result, but again, that is another post....)
I have made this a lot, and almost every person who has had it thinks it is wonderful (of course, with the exception of my husband and my brother-in-law Larry. They are kinda food snobs. My brother-in-law Peyt is usually just happy to be fed).
It actually goes quite well with Rickerson Goulash, if you are feeling ambitious, which I am usually not. I like it with my mom's meatloaf. When she is cooking.
This recipe is also very simple with a short list of ingredients.
Head of Cauliflower
Sharp Cheddar Cheese-yes, it must be sharp, and none of that pre-sliced crap, or low fat jazz
Mayonnaise
Mustard -we use yellow, but you can jazz this part up if you want. There are a billion different kinds of mustard out there. I can attest to this because my husband collects them! We may not have a scrap of food in the fridge, but by God there are at least 5different kinds of mustard in there at given time!
That's it! Well, you do have to cook it, we are getting there.
Steam the head of cauliflower til it is fork tender. Then, in a small bowl mix the mayo and mustasa. I kind of just eyeball this, but have enough to cover the cauliflower generously.
Top it with all the cheese and pop it in the oven on broil. Watch it closely because you don't want burned cheese, you want it yummy and bubbly good and hot, maybe even a little browned, but not burned.
And you are done, you have your delicious Cheese Cauliflower. I love it, and it looks pretty cool too!

Rickerson Goulash , Love it or Hate it
I say love it or hate it because my husband hates it. Well, he doesn't hate it, but it is not his favorite, and he always has to "doctor" it. But that is a topic for another post...
However, all of my kids (including my stepson from my first marriage) love it and get excited when I am making it.
It is very easy! And cheap as well!
All you need are 4 ingredients (5 if you want to add diced onion, which I always do just cause it makes it yummier).
1 lb ground beef
1 package egg noodles
2 cans tomato soup
Half of an onion, diced (optional)
(This will feed about 4 people)
Set the water to boil your egg noodles
Chop (or mince or dice, whatever you like) the onion
Brown the beef with the onion, drain off fat
Open the two cans of tomato soup and add them to the beef
Drain off the noodles and add to the beef and soup, mix
Voila! You are done! It is simple and extremely yummy. Kids like it because they can basically see what is in there!
Of course you can add what you want, and of course it is not really real "Goulash" but it's what my Grandma Rickerson and my Mom always called it, so we are calling it Goulash also!
With this meal I usually serve some corn and rolls, and if I am feeling like my family deserves it, some chilled fruit cocktail :)

Welcome!
I'm Bridget Rickerson Hines (known to many children as Aunt Bee, and there is actually a great story about how I got to be Aunt Bee, but we will save that for another time!)
I decided to start this blog as a way to get all of the wonderful comfort foods my Mom made when me and my two older sisters were growing up into print of some kind. A few years ago my mom (Janet Pipkins Rickerson) starting putting together recipe books for me and my sisters and they have grown and grown over the years. Now mine is falling apart and there are blobs of food stuck on them, and smeared words where I dribble ingredients....so I am going to start posting the recipes one at a time (OK, maybe two at a time...) so they won't get lost. I mean c'mon, it's Cyberspace, what could possibly happen?
Sit back, relax and feel free to make some of this wonderful food for yourself! I don't make guarantees (many of these dishes that my family loved, my husband and my sister's husband's just don't "get") but surely you will find something you will like!
It's all simple, easy and not at all pretentious!
